
In the beginning, the items on hand were very limited when it came to being edible. I thought I was ahead of the game when I brought the food I had in my mini fridge, plus a few items I had frozen in the outside freezer. Sadly, I was mistaken at the mis-match I created. On my first full day residing in the apartment my fridge consisted of 3 eggs, 4 bagels, 2 yogurts, a few sticks of butter, 1 lb ground turkey, and a mixture of condiments. When breakfast arrived I became stumped. No cream cheese for the bagels, not really in the mood for just eggs, and no toaster to make the bagels with butter… what was I to do? Then it hit me: French Toast Bagels. Make a little french toast batter and use the split bagels instead of bread! I felt brilliant. It was a good thing I made a habit of utilizing the syrup bottles provided by Cracker Barrel or else I would have been eating it with just butter. The bagels tasted just like the Texas Toast style French Toast you would get at a restaurant. Yummy! One meal down, two more to go.
